Stir Fried Young Jackfruit with Red Curry

I like cooked young jackfruit because the mashed (or shredded) young jackfruit has this soft texture that would nicely absorbed the sauce into it.  And with this family recipe, we always cook it with either crispy pork belly or pork crackles to give another texture and some bite to the dish.

     

This dish has been on my craving list for quite sometime. I actually could easily get a hold on all the ingredients from my next door supermarket. But I am not sure of why I didn’t make one until now. 🤔

   

Ingredients:

~ 300 g poached young jackfruit

~ 300 g. crispy pork belly or pork crackles

~ 2 tbsp red curry paste

~ 3 tbsp fish sauce

~ 2 tbsp sugar

~ 5 kaffir lime leaves, sliced thinly 

~ 2 tbsp cooking oil

    

How to:

✔️ Mashed or shredded the poached young jackfruit (if you use canned one, it is ready to be used. Just rinsed it with water)

✔️ Add oil and red curry paste to the pan. Heat up the pan in medium heat. Fry the paste for 2 mins.

✔️ Add mashed young jackfruit to the pan and stir around for 4-5 mins.

✔️ Add all the seasonings the pan and mix it well with the young jackfruit.

✔️ Add crispy pork belly or pork crackles and kaffir lime leaves to the pan. Quickly stir and turn off the heat.
