Fish Maw Soup with Fresh Shiitake and Goji Berry
Next on the line for my homey Omakase / chef selections is the famous fish maw soup.
Why did I pick this one?... Well... It is purely based on my personal craving.π I really love this dish, not only because of the taste, but it also bring back all the good festive memories from my childhood. So I wanted to introduce this dish to you all as well. π
The soup contains fish maw, bamboo shoots, fresh shiitake mushroom, goji berry, chicken and home made chicken broth. And since it is meant to be a bit fancy, I topped it up with quail egg, fish roe and crab meat, and served with Ponzu sauce.
