Stir Fried Thai Red Curry with Chicken

I normally use the home made red curry to either make stir fried (Pad Ped ผัดเผ็ด) or spicy soup without coconut milk (Kaeng Pa แกงป่า). I usually can’t eat much of Thai curry with coconut milk because the taste is so rich. But when I made it as a stir fried or a spicy soup, I always go for a second round.
