Spring Rolls
One of the famous appetizer in Asian restaurants is Spring rolls. However, there are so many versions of spring rolls, e.g. Chinese egg rolls, Vietnamese spring rolls, Thai spring rolls, etc. The differences between them is just the ingredients for the filling and the seasonings.
It is not that complicated to make spring rolls. You can find almost every ingredients at the store near by you. And the spring roll sheets are usually in the freezer. So once you get a hold on some, just grab extra packs and store it in your freezer for the future use.
A good spring roll should contain crunchy veggies, e.g. bean sprouts, cabbage, carrot, and also aromatic seasonings. I always use garlic, coriander, scallion and pepper in my spring roll. And I would use varieties of veggies and proteins based on what I could find in the shop at that time.
Ingredients, (40 medium size spring rolls)
~ 1 pack of spring roll sheet (you won’t use it all up)
~ 500 g. mince meat
~ 100 g. glass noodle
~ 5 cloves garlic, minced
~ 1 bundle of coriander, chopped
~ 5 scallions, chopped
~ 1/2 small cabbage, shredded
~ 100 g. grated carrot
~ 100 g. bean sprouts
~ 100 g. mushroom
~ 1 tbsp ground pepper
~ 4 tbsp soya sauce
~ 3 tbsp oyster sauce
~ 2 tbsp sugar
~ 1 egg, beaten, for sealing the spring rolls wrap
~ cooking oil for frying
~ sweet chili sauce for dipping
How to:
✔️ Soak the glass noodle in water for 10 mins. Drain the water out and cut the glass noodle up to shorten it (into 1 inch length).
✔️ Heat up a large pan or a wok, add garlic and fry until golden brown, then add minced meat and fry until the meat is cooked and the juice that came out from meat is reduced.
✔️ Add soya sauce, pepper, sugar to the pan. Then add glass noodle and stir until the glass noodle is soft and transparent.
✔️ Add the veggies and oyster sauce and stir until the veggies are cook (but not too over cooked!)
✔️ Wrap a spring roll up, using around 1/4 cup of the filling per wrapping sheet. And seal it with the beaten egg.
To fry the spring rolls
Option 1) Fry the spring rolls traditional way using a frying pan in medium heat until golden brown
Option 2) Fry it in an AirFryer, dip it in a cooking oil and put it in the AirFryer. Set the temperature to 180 C and set the timer for 15 mins, then 200 C for 7 mins.
✔️Serve while it hot with sweet chili dipping sauce
Tips and Tricks:
You can prepare and wrap the spring rolls in advance, and put them in the fridge or freezer. But you should fry them only when you want to eat them. So it will be crispy and taste better.
