Khao Soi Chicken ข้าวซอยไก่
Khao Soi noodle is a famous noodle dish from Northern Thailand. This noodle soup is different than most of Thai noodle soup. It’s very aromatic and has a creamy texture, because it’s made with coconut milk with curry paste.
This dish must be served with the sides (condiments). So it won’t taste too rich and heavy.
🍜 Ingredient: (serve 2)
Curry Sauce
~ 500g. chicken thigh
~ 400 ml of coconut milk
~ 300 ml water
~ 2 tbsp roasted red curry paste or standard red curry paste
~ 1 tbsp cumin powder
~ 2 tbsp curry powder
~ 2 tbsp fish sauce
~ 1 tsp dark soya sauce (optional)
~ 2 tbsp palm sugar / sugar
~ 1 stock cube (optional)
Noodle and Sides
~ 300 g. thin rice noodles or egg noodle
~ 100 g. egg noodle for the crispy noodle
~ Koriander
~ bean sprout
~ pickle green mustard / pickle cabbage
~ shallot / red onion
~ fried chili / chili oil
~ lime / lemon
How to:
Curry Sauce
✔️Separate the creamy part off of coconut milk. Cook chicken thighs with the lighter part of coconut milk and water first. Add the optional stock cube too if you like. Bring the soup to boil and simmer in low heat for 1 hour.
✔️Fry the red curry paste, cumin powder and curry powder with the creamy part of coconut milk until the curry cream become oily.
✔️Add curry cream to the chicken soup pot and seasoning it with sugar, fish sauce and dark soya sauce. Bring the soup to boil. Then low the heat down to simmer the sauce for 30 mins and turn the heat off afterward.
Tips and Tricks
🤓 To make a crispy egg noodle, boil the egg noodle first and let it dry before frying it.
